From the winery: In its second vintage, the 2019 vintage of X∙I Cabernet Sauvignon commands attention with bold and structured characteristics that entice all senses. The appearance is impenetrable and inky while the bouquet expresses aromas of dark plums and blackberries. Composed of the five Bordeaux varietals although primarily Cabernet Sauvignon, classic notes of black fruits, smoked herbs, leather, and earth are on full display. Well-structured with balanced tannins, this impeccably made wine will easily age for at least a decade or more. In contrast to the rest of our portfolio, this is not a single vineyard or single varietal wine but it does allow Winemaker Kirk Venge the ability to craft the perfect proprietary red blend.
This young and bold wine will pair well with a classic ribeye or Santa Maria Tri-tip for the meat lovers. For something interesting try it with a truffle cache e Pepe or cacao rubbed pork chop. To finish your meal with a baked apple crisp drizzled with caramel is sure to excite your taste buds.
