Description
Dovetail started as a bourbon with some unique finishes. Because it didn’t quite fit any particular class type of whiskey, it had to be bottled as a declassified whiskey. The company has to add a qualifier to each bottle, and they can’t put any age statement on it. It is whiskey finished in Rum, Port and Dunn Vineyards Cabernet Barrels. Sweet robust aromas of candied raisins and molasses are present along with a hint of anise. The sip opens with molasses and dark cherries. A touch of barrel char along with toasted marshmallows come into play, countering the sweeter notes. Mouth-coating and noticeably robust, yet not harsh, the palate is a well-developed layering of flavors that’s as satisfying as it is unique.
